Environment and Sustainability at Bryggen Tracteursted

In 2023, we celebrated our 20th anniversary and are proud to operate this historic and traditional eatery in the heart of Bryggen. The restaurant is located in one of the oldest and best-preserved wooden houses in Bergen’s historic harbor district, Bryggen. The building dates back to the 18th century and offers visitors a unique dining experience in a charming and historic atmosphere. As part of the UNESCO World Heritage site Bryggen and given the restaurant’s historical background, it is natural for us to take environmental responsibility and sustainability seriously, ensuring we can offer our guests a dining experience for generations to come.

We are committed to collaborating with our selected suppliers to ensure that our gastronomic experience is not only a culinary delight but also sustainable for nature and the environment. We pledge to minimize our impact on the surroundings and continuously improve our sustainable practices.

Our menus are crafted with ingredients supplied by vendors who share our vision of preserving nature. We set high standards for our suppliers, requiring measures that support sustainable methods. Additionally, we take responsibility for our local environment by minimizing our footprint. This includes reducing food waste, efficient waste management, energy-efficient practices, and selecting environmentally friendly materials. We believe in creating a positive impact on our local community by being conscious consumers and supporting local initiatives.

Bryggen Tracteursted

Bryggen Tracteursted is proud to be Eco-Lighthouse certified, and we have continuously worked to improve since 2014.

Our location on Bryggen means we are only accessible by public transport or on foot. There are no parking facilities, so both our staff and guests must make their way to our restaurant without a car.

We are proud of our diverse and inclusive work culture, where our employees come from various nations and collaborate closely to create a dynamic work environment. Our philosophy is to foster cohesion and community within the team.

Throughout the year, we organize several social events that strengthen the bond among employees. These events provide an opportunity to bring our team together and create memories that extend beyond the workplace.

We also conduct regular employee reviews to ensure that each employee has the opportunity to express their thoughts, goals, and challenges.
