At Bryggen Tracteursted, we invite you to experience stockfish in a new and exciting way. We are one of the few restaurants in the city that always has stockfish on the menu, and we combine modern cooking with one of Norway’s oldest export goods.
Our signature dish, Bacalà alla Vicentina, has roots dating back to the 15th century. The Italian merchant Pietro Querini was shipwrecked in the North Sea and was rescued by people on Røst in Lofoten. There he learned about drying fish, and brought this knowledge back home to Italy. Since then, stockfish has been an important part of Italian cuisine.
